Potato is the only vegetable which is easily available in every kitchen. It is most liked vegetable in every household specially kids like it most.
Til Aloo is an Indian potato dry sabzi using sesame seeds as a main ingredient with other spices. It is easy and delicious and at the same time a quick recipe. This goes well with roti,paratha, puri or dal rice ( dal chawal).
Let's start cooking this quick recipe:--
INGREDIENTS :--
Baby Potato -- 200g ( boiled)
Sesame seeds(तिल) -- 1/4 cup + 1tsp( roasted)
Cumin whole( जीरा) -- 1/2tsp
Mustard seeds( सरसों)--1/2tsp
Ginger(अदरक) -- 1 inch
Curry leaves(करी पत्ता) -- 10 to 12
Green chilli 🌶 -- 2 ( to taste)
Red chilli 🌶 -- 2
Turmeric powder(हल्दी) -- 1/2
Salt -- to taste
Sugar -- 1/2 tsp
Oil -- 2tbsp
Asafoetida(हींग) -- a pinch
METHOD :--
Boil the potatoes, peel off the skin .keep aside
Take a pan dry roast the sesame seeds till it releases the aroma. As soon as it aroma is released transfer it in a plate to cool down.
Now take a mixture jar add roasted sesame seeds, ginger, green chilli. Make a paste out of it. Keep aside.
In that same pan add oil once it heated add potatoes. Add pinch of turmeric powder and salt.
Keep stirring the potatoes till its edges turn brown. Once done keep aside.
Now add cumin seeds, mustard seeds, red chilli, half the curry leaves,asafoetida in remaining oil for tempering ( if needed one can add oil little more).
Now add the pre prepared paste along with turmeric powder and salt . Keep stirring.
Add dash of water to avoid burning of masala.
Keep on stirring the masala at medium flame. When masala is three fourth done add pre fried potatoes and mix well. Cook for another 2 to 3 min. Add remaining curry leaves and sugar. Mix well.
Switch off the flame. Cover the pan with a lid. Give 2 minutes standing time.
Til Aloo is ready to serve.
Transfer it in serving bowl and garnish with roasted sesame seeds.
