RAJGIRA HALWA/VRAT OR FASTING RECIPE/ DESSERT

Rajgira or Amaranth flour is widely used in vrat or fasting days. It is a gluten free flour and good source of calcium, protein, iron and amio acid . Rajgira is also known as RAMDANA in North India. It is a gluten free dessert and can be had for fasting or vrat days. It is a very simple recipe and can be prepared in just 15 to 20 min. with few ingredients.

Let's start cooking:--

INGREDIENTS:--

  1. Rajgira flour--1cup

  2. Milk-- 1&1/2 cup (Luke warm)

  3. Ghee-- 1/2 cup( 80ml)

  4. Sugar-- 3/4 cup(as per taste)

  5. Cardamom powder--1/2tsp

  6. Dry fruits-- chopped (handful)

  7. Dry rose petals-- 2tsp(optional)

METHOD :--

  1. Take a heavy bottom pan. Add ghee.


  1. As soon as ghee melts add Rajgira flour. Stir continuously to avoid burning of flour. Keep the flame at lowest.


  1. Roasting the flour well is the only key to make good halwa.


  1. Now add luke warm milk and mix till the flour absorbs the liquid.



  1. Add sugar for sweetness.


  1. Now add half the quantity of chopped dry fruits in halwa and keep half for garnishing.


  1. For flavoring add cardamon powder and dry rose petals.


  1. Rajgira halwa is ready to serve.


  1. Garnishing it with chopped dry fruits.
