SULTANI DAL (Awadhi Cuisine)

Sultani dal is a nawabi lentil recipe. Lentils are cooked along with rich ingredients which gives it a truly royal feel.



The dish brings in royal flavour on the table. Made from the most basic ingredients which we always have at our homes, it doesn't require any extra effort or preparation.

Lets prepare the royal dish.

INGREDIENTS:--

  1. Dal -- Boiled( toor dal 1 cup+ chana dal 1/2 + moong dal 1/2)

  2. Cumin seeds-- 1tsp

  3. Ginger and garlic paste-- 2tsp

  4. Green chilli-- 3 chopped

  5. Onions-- 2 chopped

  6. Turmeric powder-- 1tsp

  7. Red chillipowder-1tsp

  8. Tomatoes-- 2 chopped

  9. Coriander leaves-- 1tbsp

  10. Salt-- to taste

  11. Curd -- 1/2 cup

  12. Cream-- 1/2 cup

  13. Milk -- 1/2 cup

  14. Cloves & green chilli powder-- 1tsp

  15. Ghee-- 4tbsp(as required for cooking)

  16. Coal -- small piece

  17. Ghee -- 1tsp( tempering)

METHOD:--

  1. Take all three types of lentils(toor dal,moong dal, chana dal).

  1. Wash thoroughly and boiled it. Keep aside.

3. Chop onions and green chilli and keep aside.


4. Chop tomatoes and keep aside.



  1. Take a bowl add cream and curd.

6 . Beat well.


7. Now add milk . Mix well no lumps should be there.


8. Take a fry pan . Add ghee. As soon as the ghee heat up add cumin seeds.



9. Add ginger and garlic paste. Stir for a minute.


  1. Now add green chilli and onions.

  1. Stir the onions till it trun translucent.

  1. Add turmeric powder and red chilli powder. Mix well.

  1. Now add chopped tomatoes.

  1. Cook till the tomatoes are mashy.

15. Now add boiled dal. Adjusted salt at this point. Mix well. Cook for three to four minutes.



  1. Now add aromatic masala ( green cardamon and Clove powder). Mix well.

17. Now switch off the flame. Add pre prepared mixer of curd, milk, and cream.


18. Mix well.



19. Heat a piece of coal and place it in a steel bowl. Place it in the centre of the dal, add ghee and Cloves and cover the pan quickly, smoke it.


20. Cover the pan for two minutes. 21. Remove the lid ,discard the coal.

  1. Sultani dal is ready to serve.

  2. Serve the royal dish with naan, laacha paratha, pulao.
