SPINACH EGG CURRY

Spinach egg curry is a delicious Indian curry with boiled eggs in green gravy. Egg curry recipe is wholesome nutritious and finger - licking good. Indeed treat for egg lovers.

Let's prepare the delicious Spinach Egg Curry.

INGREDIENTS:--

  1. Egg-- 5 (hard boiled)

  2. Spinach-- 500g ( blanch)

  3. Green chilli-- 4

  4. Coriander leaves-- handful

  5. Onion-- 2( finely chopped)

  6. Ginger-- 2 inch

  7. Garlic-- 7 cloves

  8. Tomato-- 2(roughly chopped)

  9. Cinnamon-- 1 inch

  10. Green cardamom-- 2

  11. Black cardamon-- 1

  12. Cloves-- 2

  13. Red chilli powder-- 1tsp

  14. Coriander powder -- 1tbsp

  15. Cumin powder-- 1tsp

  16. Kasturi Methi-- 1tbsp

  17. Salt-- to taste

  18. Fresh cream-- 2 to 4 tbsp

  19. Oil -- as required


METHOD:--

  1. Clean and rinse Spinach with water to remove the dirt.

  2. Boil water in a pan with a pinch of salt. Once the water start boiling, add Spinach leaves to the hot water. Cook for 40 to 50 sec.

  3. Transfer the leaves immediately to the bowl of ice cold water. This step stop the cooking process and retains the leaves green colour.

  4. Now you can use the blanched Spinach leaves to make puree.

  5. Take a mixer jar add blanch Spinach leaves, Coriander leaves, green chilli.

6. Make a smooth paste out it. If required add dash of water.

7. Finely chopped the onions and keep aside.

8. Roughly chopped tomatoes, ginger, garlic ( make smooth paste out of it)

9. Marinate the boil eggs with salt, turmeric powder, red chillpowder. Keep aside.

10. Now take a pan add oil . As soon as oil heat up add marinate eggs.

11. Fry till they are slightly brown. And keep it aside.

12. Now take a fry pan add oil . As soon as oil heat up tempered it with whole spices.

13. Now add chopped onion.

14. Fry till it trun light golden brown.

15. Now add tomatoes paste. Along with powdered spices.

16. Cook till oil ooze out.

17. Now add Spinach puree.

18. Mix it well. Cover with a lid and let it Cook till the oil get separated.

19. Add fried eggs.

20. Mix it well and cook for another 3 to 4 minutes. Check the salt at this point.

21. Now switch off the heat. Add fresh cream.

22. Mix it well. Spinach egg curry is ready to serve. Serve with roti, parathas , pulav,naan, tandoori roti, Rumali roti.
