Shahi pulao is packed with toasted nuts and aromatic spices. It is a delicious variant of rice made with dry fruits and saffron.
Most pulao variations are usually made with long grained and fragrant basmati rice. The grains are cooked to perfection without any sticky so that each individual piece of rice keeps its shape.
Shahi pulao is one of the easiest pulao recipe to make and unlike other pulaos, this one is on the sweeter side.
Lets prepare the Shahi Pulao:--
INGREDIENTS:--
Rice-- 1 cup(basmati rice)
Water-- 2cup
Cashew nuts-- 2tbsp
Almonds-- 2tbsp
Raisin-- 2tbsp
Pista-- 2tbsp(chopped)
Sugar-- 2tbsp
Salt-- to taste
Saffron strands-- a pinch
Milk--1/4cup
Cumin whole-- 1tsp
Fennel seeds-- 1tsp
Green cardamon-- 2
Cloves-- 4
Cinnamon stick-- 1 inch
Black cardamon-- 1
Star anis -- 1
Rose water -- 1tbsp
Kewra water-- 1tbsp
Green cardamon powder-- 1tsp
METHOD:--
Take 1 cup of rice in a bowl.
Wash the rice throughly, strain it and keep it aside for about 15 minutes .
Take your choice of dry fruits. Here I have used cashew nuts, almonds, raisin in this recipe.
Collect all the whole spices in a plate. And keep it aside.
5. Soak saffron strands in warm milk and keep aside.
Now take a fry pan add ghee. As soon as it heat ups add cashew nuts and almonds.
7. Stir continuously till it trun light golden brown. Add raisin ,stir few more seconds.
Transfer the toasted nuts in a plate and keep aside.
9. Now take a heavy bottom pan. Add 3 to 4 tbsp ghee. Add whole spices. Stir for just few seconds.
10. Add rice,sugar and salt. Mix it well on medium heat.
Add water .
12. Cover with a lid till half done.
13. When the rice is half done add pre toasted nuts and.
14. Mix the whole with light handed.
Again cover the pot with the lid. Cook till it is three fourth done.
Now add rose water, Kewra water and saffron soaked milk and green cardamon powder.
One last time cover with the lid for 2 to 4 minutes. Switch off the flame. Give standing time of 10 minutes .
Shahi pulao is ready to serve.
