SHAHI KESAR PHIRNI

Phirni is traditional Indian sweet. Phirni is made for festival or in special occasions. To make this traditional sweet we need very ingredients only milk,rice paste,nuts,green cardamon. This thick,creamy phirni taste best when it serve chilled.


Traditionally Phirni is served in "SHIKORAS" or small clay bowls. When Phirni is serve in earthen bowl it absorbs some moisture from the dish and also give it a thicker consistency.

Lets prepare the Shahi Kesar Phirni:--

INGREDIENTS:--

  1. Milk-- 1L(full fat)

  2. Basmati rice-- 50g( soak&coarsely paste)

  3. Khoya-- 50g(ricotta cheese)

  4. Dry fruits-- handful

  5. Green cardamon-- 1tsp(powdered)

  6. Saffron strands-- 5 to 6( kesar)

  7. Sugar -- to taste


METHOD:--

  1. Soak rice just for 5 min.

2. Make coarsely paste out of it and keep aside.

3. On other hand take a pan boil the milk.

4. As soon as milk start boiling add rice paste and keep stirring. To avoid the formation of lumps.

5. Keep stirring till the rice paste is done. Slow cooking is the key to make perfect phirni.

6. Check the consistency. It should coat the spatula.

7. At this point add khoya. Mix well.

8. Now add sugar and your choice of dry fruits.


9. Take half cup of milk and soak saffron strands.


10. Add saffron in phirni and green cardamon powder. Mix well.

  1. 11. Switch off the flame. Cover the phirni. Give standing time of ten minutes.

12. Let the phirni co down completely. Refrigerate it.

13. Serve the chilled phirni in SHIKORAS or any bowl available in your kitchen.

14. Enjoy with your friends & family members.
