CHICKEN MAHARANI

Chicken Maharani is a royal dish. Muglai cuisine have their own taste and flavour. It is made up of onion, cashew paste, lalmonds paste, fresh cream with some flavourful spices. The taste of the dish is just amazing and mouthwatering. This kind of recipe one can make with less efforts even if guest arrived in short notice. Chicken Maharani can be serve with naan,butter naan, tawa roti,paratha, pulav, jeera rice.



Lets prepare Chicken Maharani:--

INGREDIENTS:--

  1. Chicken-- 500g

  2. Onion-- 2medium(sliced)

  3. Turmeric-- 1tsp

  4. Red chillipowder-1tsp

  5. Kashmiri red chilli powder--1tsp

  6. Green chilli--2or 3/ to taste

  7. Cumin seeds-- 1tsp

  8. Coriander seeds-- 1tbsp

  9. Fennel seeds-- 1tsp

  10. Mace -- 1/2

  11. Cinnamon-- 1inch

  12. Green cardamon-- 4

  13. Cloves--4

  14. Ginger-- 1inch

  15. Garlic-- 12 Cloves

  16. Cashew-- 10 to 15

  17. Almonds-- 10 to 15

  18. Kasuri methi-- 1tbsp

  19. Water-- as required

  20. Salt-- to taste

  21. Fresh cream-- 2tbsp

  22. Oil / ghee-- as required

  23. Curd -- 1tbsp

METHOD:--

  1. Soak Almonds in warm water for 15 min. and aside.

  2. Clean the chicken throughly.

  1. Add turmeric, red chilli powder, salt 1tsp to the chicken.


  1. Marinate the chicken and keep aside for 15 to 20 min.


  1. Now take a pan roasted the spices(cuminseeds,Corianderseeds, fennel seeds, Cloves,Green cardamon, Cinnamon stick,cashew )for few seconds only on lowest heat.


  1. As soon as it releases the aroma transfer in a plate. Let it cool down completely.

  2. Now take a mixer jar add ginger, garlic, green chilli, Curd, Kashmiri red chilli powder kasuri methi and the roasted spices.


  1. Make smooth paste out of it. If required add dash of water.

  2. In the same pan add oil or ghee whichever you prefer. Add slices onion.

10. Stir till onion trun light brown.


  1. Now add marinated chicken.

12. Stir till chicken pieces change it colour.(medium heat)



  1. Now add pre prepared paste with dash of water. As nuts have the tendency to stick the bottom.

  1. Mix it well and cover the pan. Cook till half done.

  2. Now remove the lid. Check the chicken whether half done or not.

  1. Now add salt to taste and half the quantity of fresh cream.


  1. Mix well. At this point if required add half cup of water to avoid sticking of masala in the bottom.


18.Cover the pan and cook till fully done.

  1. Once the meat is off the bone check the salt and consistency.

  2. Now switch off the flame and add remaining fresh cream, mix well and give a standing time of 10 min.

  3. Chicken Maharani is ready to serve.

22. Serve with your choice of bread or rice.
