About KANJI:

  • Kanji is a probiotic fermented drink has unique colour and taste.

  • Kanji is popular in North India and it's a traditional Punjabi winter drink with lots of health benefits.

  • It is made with water, black carrots, orange carrots, beetroot, mustard seeds.

  • This drink is low in calories, rich in dietary fiber, vitamin K, vitamin C and Manganese. All these nutrients offer protection against chronic disease.

Ingredients :


  1. Black carrots - 2 pcs

  2. Orange carrots 🥕 - 1 pc

  3. Beetroot - 1 pc

  4. Amla - 1pc

  5. Regular salt- 1 tsp (according to taste)

  6. Black salt- 1tsp (according to taste)

  7. Mustard seeds - 1 tsp( coarsely)

  8. Chilli powder - 🌶 1/2 tsp

  9. Water💧 - 1ltr

For a twist, I have added grated AMLA in this recipe for further enrichment with VitaninC.

Method:

  1. Chop Black carrots, Orange carrots, Beetroot, in small pieces and grate Amla. Keep it aside.

  2. Take a big size bowl. Pour 1L water in it. Add regular salt, Black salt, mustard seed powder (coarsely),chilli powder and stir well.

  3. Now add all chopped veggies along with grated amla and mix well.

  4. Now transfer whole mix into a sterilized glass jar.

  5. Now keep the drink under direct Sunlight and allow to ferment in jar for 3-4 days.

  6. During this 3-4days storage most of veggies nutrients leaches out in water.


  1. Kanji is ready to serve. Enjoy the sour,spicy, and the pungent taste.


Note: Depending on availability of Sunlight in your region, drink can be fermented for 4-5 days in case of low sunlight or 2-3days enough for hot sunny days.
