Pickle making is an art. It is a old age tradition in Indian households. Most of the family have their own recipes according to taste. It is easy to prepare at home with few ingredients. One can store it for long time and use it whenever requires. Either for making any kind of Pickle or in curries.
Pickle powder or Achar masala is a mix of Indian spices which is widely used in Indian kitchen. Achari masala can be used to flavor the various kind of curries and dry sabzi apart of pickles. This achari masala when added to the regular dish it take the taste to the next level. With this achari masala one can prepare various kind of Pickle like mango pickle, mix pickle, etc.
Let's start prepare the masala :--
INGREDIENTS:--
Fennel seeds( sauf) -- 1/2 cup
Fenugreek seeds ( methi) -- 5tbsp
Yellow mustard( pili sarso) -- 1/2 cup
Black mustard( kali sarso) -- 1/4 cup
Turmeric powder (haldi) --6tbsp
Red chilli 🌶 whole -- 10
Red chilli powder ( degi mirch ) --2 tbsp
Black pepper ( kali mirch) -- 1 1/2 tbsp
Asafoetida ( hing) -- 1tsp
Dry mango powder ( amchur) --- 5 tbsp
METHOD :--
Take a pan add fennel seeds, fenugreek seeds ,mustard seeds both yellow and black,black pepper. Dry roast them in medium flame.
Roast the spices till the aroma releases.
Remove the spices from the heat as soon as it releases the aroma and transfer them into a plate to cool down.
Now add all the roasted spices in the grinder jar and grind them coarsely ground.
Take a large bowl and transfer the coarsely ground spices in it. Add all the powder spices and salt .
Mix it well .
Store in a airtight jar.
Note :-- Achari masala can be use for curry or dry sabzi also for achari flavoure like Achari paneer/ Achari aloo / Achari chole / Achari chicken.
